Ingredients

For the Dough
  • 2 cups Plain Flour Essential for the dough's foundation.
  • 1/4 cup Cooking Oil Vegetable or coconut oil can be used.
  • 3/4 cup Water Adjust based on desired consistency.
For the Filling
  • 1 cup Chopped Peanuts Consider using roasted peanuts for added depth.
  • 1/4 cup Sugar Feel free to use brown sugar for complexity.
  • 2 tablespoons Toasted Sesame Seeds Can be replaced with crushed nuts if desired.

Equipment

  • mixing bowl
  • Deep pot
  • wire rack

Method

How to Make Kok Chye
  1. Sift the plain flour into a mixing bowl. Add the cooking oil and mix until it resembles breadcrumbs. Gradually pour in water while stirring until you achieve a smooth dough. Cover with a damp cloth and let it rest for 10 minutes.
  2. In a separate bowl, combine the chopped peanuts, sugar, and toasted sesame seeds. Mix them together thoroughly to ensure the flavors meld perfectly.
  3. Pinch off about 5 grams of the rested dough. Roll it into a ball, then flatten it out to form a small bowl. Place a spoonful of the peanut filling in the center, fold the dough in half, and pinch to seal shut, creating pleats around the edges for a decorative finish.
  4. Heat oil in a deep pot over medium heat. Carefully fry the puffs in batches until they turn golden brown and crispy, making sure not to overcrowd the pot. Drain the cooked puffs on a wire rack to keep them crispy.
  5. Optional: Serve warm with a sprinkle of toasted sesame seeds on top for an extra crunch.
