  • 1 tablespoon neutral oil olive or canola oil can be used
  • 1 cup carrots, diced swap with bell peppers or zucchini if desired
  • 1 cup celery, diced can be omitted if not available
  • 1 cup frozen peas green beans or edamame can be used as substitutes
  • 1 cup frozen corn kernels diced corn on the cob works as well
  • 2 cups leftover hot dogs, diced any type works, grilled or cocktail
  • 2 cups baby spinach leaves can substitute with kale or chard
  • 4 cups cooked rice day-old is best, fresh can work too
  • 1 teaspoon salt adjust according to taste
  • 1/2 teaspoon ground white pepper black pepper can be used as a substitute
Optional Add-ins
  • 2 tablespoons soy sauce for added savory flavor
  • 2 tablespoons barbecue sauce for an extra burst of flavor

Method
 

Cooking Directions
  1. Heat the oil in a 10-inch sauté pan over medium to medium-high heat.
  2. Add the diced carrots and sauté for about 3 minutes until they become softened and bright.
  3. Incorporate the diced celery and sauté for another 3 minutes for added crunch.
  4. Add the frozen peas, corn, and diced hot dogs; sauté for about 5 minutes until the hot dogs are browned.
  5. Gently add the baby spinach and cook for about 2 minutes until it wilts down.
  6. Lower the heat to medium and add the cooked rice; mix thoroughly until heated through and season with salt and white pepper.
  7. Optional: Drizzle with soy sauce or barbecue sauce before serving for extra flavor.
