How to Make Lemon Basil Sugar Cookies
- Preheat your oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, and sea salt until well combined.
- In a separate bowl, beat together the unsalted butter and granulated sugar until light and fluffy (about 3–5 minutes).
- Add the large egg, lemon zest, fresh lemon juice, finely chopped basil, and vanilla extract to the butter mixture and mix until smooth.
- Gradually add the dry mixture into the wet ingredients, mixing until a soft dough forms. Chill if sticky.
- Using a tablespoon, scoop portions of dough onto the baking sheets and flatten slightly.
- Bake for 10–12 minutes or until the edges are golden brown.
- Allow cookies to rest on the baking sheet for 2 minutes before transferring to wire racks to cool.
