Ingredients
  

For the Salmon
  • 4 fillets Salmon Can use frozen salmon—thaw properly before cooking.
  • 4 tablespoons Unsalted butter Adds creaminess to the sauce.
  • 2 tablespoons Fresh lemon juice Use fresh lime juice as a substitute if needed.
  • 2 cloves Garlic Fresh enhances flavor; can substitute with garlic powder.
  • to taste Salt
  • to taste Pepper
For the Side
  • 1.5 pounds Baby potatoes Other potatoes like Yukon Gold may be used.
  • 3 tablespoons Olive oil Avocado oil can be used as an alternative.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 2 cups Broccoli florets Can substitute with asparagus or green beans.
Garnish (Optional)
  • 1 tablespoon Lemon zest Omit if not available.
  • 2 tablespoons Fresh parsley For garnish.

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Coat halved baby potatoes in a bowl with olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on a baking sheet.
  3. Roast the potatoes for 20 minutes until golden brown and crispy.
  4. Toss broccoli florets with olive oil, salt, and pepper. After 20 minutes, add to the baking sheet and roast for an additional 15-20 minutes.
  5. Melt butter in a skillet over medium heat; sauté garlic until fragrant. Add fresh lemon juice, salt, and pepper.
  6. Cook salmon fillets skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
  7. Plate the salmon with potatoes and broccoli. Drizzle with lemon butter sauce and garnish with lemon slices and parsley.
