Preparation Steps
- Pound the Chicken: Start by gently pounding the chicken breasts to about 1/2” thickness.
- Season Generously: Sprinkle the chicken with sea salt and black pepper on both sides.
- Mix the Coating: In a bowl, combine the almond flour and tapioca flour.
- Heat the Ghee: Melt 1 Tbsp of ghee in a skillet over medium heat.
- Sauté Aromatics: Add the minced garlic and chopped onion to the skillet. Sauté until translucent.
- Add Broth and Lemon: Combine the chicken bone broth and fresh lemon juice, then pour into the skillet.
- Incorporate Coconut Cream: Stir in the coconut cream and mustard if using.
- Add Capers: Toss in the capers and stir gently.
- Cook the Chicken: Place the seasoned chicken breasts into the skillet and cook until done.
- Serve and Garnish: Plate the chicken and drizzle with sauce. Garnish with additional capers.
