How to Make Lemon Curd
- In a medium bowl, whisk the eggs, sugar, and salt together until smooth.
- Pour in the fresh lemon juice and add the zest. Whisk until well combined.
- Transfer the mixture to a saucepan and cook over medium heat, stirring constantly for 8-10 minutes until thickened.
- Remove from heat and stir in the diced butter until melted and smooth.
- Strain the lemon curd through a fine mesh sieve into a bowl to remove lumps.
- Allow to cool, then cover and refrigerate until ready to use.
