Ingredients
  

For the Chicken
  • 2 tablespoons Olive oil for cooking chicken
  • 1 pound Boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons Taco seasoning
For the Salad Base
  • 4 cups Romaine lettuce chopped
  • 2 medium Tomatoes diced
  • 1 cup Canned corn drained
  • 1 can Canned black beans drained and rinsed
  • 1 medium Avocado diced
For the Topping
  • 1 cup Shredded cheese any kind, such as sharp cheddar or Mexican blend
  • 1 cup Seasoned tortilla chips crushed

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  2. Sprinkle half of the taco seasoning over the chicken and stir to combine. Cook for an additional minute until fragrant.
  3. In a large bowl, combine the romaine lettuce, diced tomatoes, drained corn, rinsed black beans, diced avocado, and shredded cheese. Toss gently.
  4. Top the salad mixture with the seasoned chicken and crush tortilla chips over the top.
