  • 1 lb Lean Ground Beef Substitute with ground turkey, chicken, or plant-based alternatives like lentils or crumbled tofu.
For the Seasoning
  • 1 tbsp Creole Seasoning Adjust based on your preferred spice level.
  • 1 tbsp Cumin
  • 1 tbsp Ground Coriander
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 1 tbsp Crushed Red Pepper Adjust to taste.
  • 2 tbsp Taco Seasoning Use store-bought or homemade.
  • to taste Salt
  • to taste Black Pepper
For the Potatoes
  • 2 large Medium-Large Potatoes Yukon Gold recommended.
  • 2 tbsp Olive Oil
  • 1 tsp Oregano
  • 1 tsp Paprika
For the Toppings
  • 1 large Large Tomato Can substitute with cherry tomatoes.
  • 1 each Jalapeño Optional.
  • 1/2 medium Red Onion Can use white or yellow as alternative.
  • 1 each Lime
  • 1/4 cup Cilantro Can substitute with parsley.
For the Sriracha Mayo
  • 1/2 cup Mayonnaise
  • 2 tbsp Sriracha Adjust based on spice threshold.
  • 1 tbsp Lemon Juice
  • to taste Ground Black Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F. Wash and dice the medium-large potatoes into ½ inch cubes.
  2. Toss the diced potatoes in a bowl with olive oil, salt, oregano, garlic powder, and paprika.
  3. Bake the potatoes in the oven for 30-35 minutes until golden brown and crispy.
Pico de Gallo
  1. Prepare the pico de gallo by dicing the large tomato, jalapeño, and half of the red onion. Combine these with chopped cilantro and lime juice.
Cooking Protein
  1. Cook the ground beef in a skillet over medium-high heat, seasoning with spices and taco seasoning until browned.
Making Sriracha Mayo
  1. Mix mayonnaise, Sriracha, lemon juice, and black pepper to create Sriracha mayo.
Assembling Bowls
  1. Assemble meal prep containers by starting with a layer of roasted potatoes, followed by seasoned ground beef, pico de gallo, and drizzling with Sriracha mayo.
