- Dissolve the orange jello in 1 cup of boiling water, stirring until fully mixed. Set aside to cool slightly.
- Mix the Graham Cracker crumbs, melted butter, and a pinch of salt in a mixing bowl until evenly combined.
- Press the crumb mixture into the bottom of a 9x13 inch dish to create a solid crust.
- Beat the cream cheese and 1/2 cup of powdered sugar until smooth and creamy.
- Combine the jello mixture with the cream cheese mixture, stirring until fully blended.
- Whip the heavy cream with the remaining 1/2 cup of powdered sugar and vanilla extract until stiff peaks form.
- Fold the whipped cream gently into the jello and cream cheese mixture.
- Pour the filling mixture over the crust, smoothing the top with a spatula.
- Chill the cheesecake in the refrigerator for at least 4 hours, or until firm.
- Garnish with orange zest just before serving.
