Preparation
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs, granulated sugar, and melted butter until sandy. Press firmly into the bottom of the springform pan and bake for 8-10 minutes, then cool completely.
- In an electric mixer, beat cream cheese and sugar until light and fluffy. Add sour cream and vanilla, then mix in eggs one at a time until just combined.
- In a saucepan, combine heavy cream, brown sugar, and butter. Bring to a boil, then simmer until thickened. Divide into two bowls and color one green and the other purple.
- Pour cheesecake filling over the cooled crust. Drizzle the green and purple mixtures on top, then swirl gently with a toothpick.
- Bake for 50-60 minutes until the edges are set but the center remains slightly wobbly.
- Cool gradually in the oven with the door open, then refrigerate for at least 4 hours to set.
- Decorate with additional swirls and edible glitter before serving.
