Steps
  1. In a large saucepan, mix together the orange gelatin, vanilla pudding mix, and hot water. Stir frequently over medium heat and bring to a gentle boil.
  2. Continue boiling while stirring for about 5 minutes, until the mixture turns clear orange.
  3. Pour the mixture into a large bowl and chill in the refrigerator until set, about 4 hours or preferably overnight.
  4. Once set, use a potato masher to combine the chilled gelatin mixture with Cool Whip.
  5. Gently fold in the drained mandarin oranges, ensuring even distribution. Chill again until ready to serve.
