Cupcake Preparation
- Preheat the oven to 350°F (175°C) and prepare 24 muffin cups with paper liners.
- Cream together the butter, sugar, and vanilla in a large bowl until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the chopped maraschino cherries and cherry juice.
- Combine the flour, baking powder, and salt in another bowl, then mix into the cherry mixture with milk.
- Fill muffin cups halfway with batter and bake for 20-25 minutes or until golden.
Frosting Preparation
- Beat the cream cheese and butter until smooth, then gradually add confectioners’ sugar.
- Mix in cherry juice and pink food coloring until well blended.
- Pipe the frosting onto the cooled cupcakes and top each with a maraschino cherry.
