  • 1 cup Sun dried tomatoes Chopped.
  • 1 teaspoon Oregano
  • 1/2 teaspoon Red chili flakes For heat.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Ground black pepper To taste.
  • 1 can Chickpeas Drained and rinsed.
  • 2 cups Vegetable broth
  • 2 tablespoons Tomato paste
  • 1 cup Vegan cream
  • 4 cups Baby spinach
  • 1/4 cup Basil leaves Fresh.
  • 1/4 cup Vegan parmesan cheese Optional topping.

Steps
  1. Heat olive oil in a pot over medium heat until shimmering.
  2. Sauté minced garlic, sun dried tomatoes, oregano, red chili flakes, salt, and black pepper for 2-3 minutes.
  3. Stir in chickpeas, vegetable broth, and tomato paste; bring to a gentle simmer for 5 minutes.
  4. Add vegan cream, baby spinach, and basil, cooking until spinach wilts.
  5. Serve hot, optionally topped with grated vegan parmesan cheese.
