  • 2 tablespoons butter adds richness

  • 2 teaspoons garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • cup sun-dried tomatoes roughly chopped or julienned
  • 1 tablespoon tomato paste
  • ½ cup chicken stock
For the Creaminess
  • 1 ½ cups heavy cream
  • ¼ cup cream cheese
  • cup Parmesan cheese grated
Final Touches
  • 1 to 2 tablespoons capers
  • 2 cups baby spinach wilted
  • fresh parsley optional, for garnish

Cooking Steps
  1. Heat the high-smoke-point oil in a large skillet over medium heat.
  2. Add the butter, minced onion, and garlic. Cook until the onion is translucent, about 3-4 minutes.
  3. Stir in the dried basil, oregano, sun-dried tomatoes, and tomato paste. Cook for an additional 2 minutes.
  4. Pour in the chicken stock and bring to a gentle simmer for 3-5 minutes.
  5. Add the heavy cream and cream cheese, stirring until smooth.
  6. Sprinkle in the grated Parmesan cheese and capers, stirring to combine.
  7. Gently fold in the shrimp and baby spinach, cooking until the shrimp are pink, about 4-5 minutes.
  8. Taste and season with salt and pepper as desired.
  9. Garnish with fresh parsley before serving.
