  • 2 large eggs
  • 1 1/2 cups flour plus more for coating chocolate chips
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup very ripe bananas mashed
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup chocolate chips optional

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar in a mixing bowl until light and fluffy—about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Combine the dry ingredients by whisking together the flour, baking soda, and salt in another bowl.
  5. Gradually incorporate the dry ingredients into the creamed mixture, mixing until just combined.
  6. Stir in the mashed bananas, sour cream, and vanilla extract until evenly incorporated.
  7. Fold in the chopped walnuts or pecans and chocolate chips, if using.
  8. Pour the batter into a prepared loaf pan, spreading it evenly.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
