How to Make Mexican Shortbread Cookies
- Preheat your oven to 350°F (175°C).
- Mix the unsalted butter, vegetable shortening, sugar, and ground cinnamon in a mixing bowl until smooth.
- Gradually add the flour, stirring until a soft dough forms. Add more flour if sticky.
- Combine the water and anise extract into the dough and mix until evenly infused.
- Scoop the dough and roll it into small balls, about the size of a tablespoon.
- Roll each dough ball in the cinnamon sugar mixture until coated.
- Place the cookies on a baking sheet lined with parchment paper and bake until golden brown, about 10-12 minutes.
- Allow cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
