How to Make Mexican Omelette
- Begin by chopping the onions, bell peppers, and tomato. Rinse the black beans, and prepare your choice of sausage and cheese.
- In a skillet, sauté the onion with a bit of oil until softened. Then, add the bell peppers and cook for an additional 2 minutes. Stir in the tomato, black beans, sausage, and seasonings, cooking everything together for about 3-4 minutes until heated through.
- Whisk the eggs, adding milk if desired, along with salt and pepper, until the mixture is fluffy and well combined.
- Heat some butter or oil in a skillet over medium heat, then pour in the egg mixture. Allow it to cook undisturbed for 1-2 minutes until the edges start to set.
- Spoon your delicious filling onto one half of the omelette and sprinkle the cheese on top. Carefully fold the other half over the filling and cook for a brief moment to melt the cheese.
