  • 0.25 cup Cooked Beef or Chicken Sausage Crumpled, omit for vegetarian twist.
  • 0.25 cup Canned Black Beans Drained and rinsed.
  • 0.5 tsp Ground Cumin
  • 0.5 tsp Smoked Paprika
  • 1 pinch Chili Powder Optional.
  • 0.5 cup Cheddar or Monterey Jack Cheese Shredded.
  • 1 tbsp Fresh Cilantro For garnish.
For Serving
  • 1 whole Avocado or Guacamole Optional.
  • 1 cup Salsa or Pico de Gallo Store-bought or homemade.
  • 1 whole Lime Wedges
  • 0.5 cup Sour Cream or Greek Yogurt Optional.
  • 2 pieces Warm Tortillas or Toast Optional side.

How to Make Mexican Omelette
  1. Begin by chopping the onions, bell peppers, and tomato. Rinse the black beans, and prepare your choice of sausage and cheese.
  2. In a skillet, sauté the onion with a bit of oil until softened. Then, add the bell peppers and cook for an additional 2 minutes. Stir in the tomato, black beans, sausage, and seasonings, cooking everything together for about 3-4 minutes until heated through.
  3. Whisk the eggs, adding milk if desired, along with salt and pepper, until the mixture is fluffy and well combined.
  4. Heat some butter or oil in a skillet over medium heat, then pour in the egg mixture. Allow it to cook undisturbed for 1-2 minutes until the edges start to set.
  5. Spoon your delicious filling onto one half of the omelette and sprinkle the cheese on top. Carefully fold the other half over the filling and cook for a brief moment to melt the cheese.
  6. Top your omelette with fresh cilantro, avocado, and salsa for a burst of flavor. Serve with lime wedges.
