For the Meatloaf
  • 1 lb Ground Beef or ground turkey/chicken for lighter option
  • 2 cups Corn Tortilla Chips or gluten-free breadcrumbs substitute
  • 1 medium Yellow Onion diced
  • 1 medium Green Bell Pepper diced
  • 2 large Eggs whisked
  • 1 can Rotel Tomatoes
  • 1 cup Canned Corn drained, omit if preferred
  • 1 packet Taco Seasoning or homemade
  • 1 cup Cheddar or Pepper Jack Cheese omit for dairy-free
  • to taste Red Taco Sauce optional topping
  • to taste Cilantro or Parsley for garnishing

Method
 

Steps to Make the Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. Combine all the ingredients in a large mixing bowl. Mix gently until just blended.
  3. Transfer the mixture into a greased 9x5-inch loaf pan and shape into a loaf.
  4. Bake for 50 minutes, then add taco sauce and extra cheese and bake for another 10-15 minutes.
  5. Let rest for 10 minutes under foil before slicing.
