How to Make Mexican Taco Meatloaf
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, crushed tortilla chips, diced onion, diced bell pepper, whisked eggs, Rotel tomatoes, drained corn, and taco seasoning. Stir gently until just combined.
- Transfer the meat mixture into a 9x5-inch loaf pan and shape it into a loaf.
- Bake for 50 minutes, checking for an internal temperature of 160°F (71°C).
- Top with red taco sauce and remaining shredded cheese, and return to the oven for an additional 10-15 minutes.
- Once done, let it rest for 10 minutes before slicing.
