- Preheat the oven to 400°F (200°C). Prepare a mini muffin tin with nonstick spray or liners.
- Combine the yogurt, milk, oil (or melted butter), eggs, and vanilla extract in a large bowl. Stir gently until just combined.
- Mix in the flour, brown sugar, baking soda, and salt gradually. Be careful not to overmix.
- Fold in the rainbow sprinkles gently to keep colors vibrant.
- Scoop the batter into muffin cups, filling them about ¾ full.
- Bake for 9–11 minutes, or until a toothpick inserted comes out clean.
- Cool the muffins in the pan for about 10 minutes before transferring them to a wire rack.
