Preparation
  1. Preheat Oven: Begin by setting your oven to 350°F (175°C). While it heats, spray a muffin tin with nonstick spray to prepare for these adorable meatloafs.
  2. Mix Ingredients: In a large mixing bowl, gently combine the ground beef, finely minced onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and ½ cup of ketchup. Use your hands to mix, being careful not to overmix to maintain tenderness.
  3. Prepare Glaze: In a separate bowl, whisk together the remaining ¼ cup of ketchup, brown sugar, and mustard. Spoon this mixture evenly over the meat mixture in each muffin tin.
  4. Bake: Place the filled muffin tin in the preheated oven and bake for about 30 minutes, or until each mini meatloaf is cooked through and reaches a golden brown.
  5. Cool: Once done, allow the mini meatloafs to cool for several minutes in the tin before carefully transferring them to a serving platter.
