- Whisk together almond milk and apple cider vinegar in a bowl, allowing it to sit for 5-10 minutes until it curdles.
- Preheat your oven to 375°F (190°C). Prepare a loaf pan with vegan butter and line it with parchment paper.
- Mash ripe bananas until smooth, then mix in melted coconut oil, maple syrup, vanilla extract, and made buttermilk.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
- Fold the dry mixture into wet ingredients gently. Avoid over-mixing.
- Fold in half of the chocolate chips, pour into the loaf pan, and sprinkle the other half on top.
- Bake for 55-60 minutes, checking for doneness with a toothpick.
- Let the loaf cool in the pan for 25-30 minutes before transferring it to a wire rack.
