  • 1 teaspoon Baking Soda Ensure it's not expired
  • 1 teaspoon Ground Cinnamon Enhances flavor
  • 1/2 teaspoon Ground Nutmeg Enhances flavor
  • 1/2 teaspoon Sea Salt Essential for flavor enhancement
  • 1 cup Almond Milk Any dairy-free milk can substitute
  • 1 tablespoon Apple Cider Vinegar Can be replaced with lemon juice
  • 1 teaspoon Vanilla Extract Use pure extract if possible
  • 1/3 cup Coconut Oil (melted) Can substitute with vegan butter or other oils
  • 1 cup Semi-Sweet Chocolate Chips Ensure they are vegan-friendly

Method
 

Directions
  1. Whisk together almond milk and apple cider vinegar in a bowl, allowing it to sit for 5-10 minutes until it curdles.
  2. Preheat your oven to 375°F (190°C). Prepare a loaf pan with vegan butter and line it with parchment paper.
  3. Mash ripe bananas until smooth, then mix in melted coconut oil, maple syrup, vanilla extract, and made buttermilk.
  4. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  5. Fold the dry mixture into wet ingredients gently. Avoid over-mixing.
  6. Fold in half of the chocolate chips, pour into the loaf pan, and sprinkle the other half on top.
  7. Bake for 55-60 minutes, checking for doneness with a toothpick.
  8. Let the loaf cool in the pan for 25-30 minutes before transferring it to a wire rack.
