  • 1/2 cup Maple Syrup can substitute with honey or monk fruit
  • 1 teaspoon Vanilla Extract
  • 2 cups Almond Flour do not substitute 1:1 with all-purpose flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon optional

  • 1/2 cup Chocolate Chips
  • 1/2 cup Nuts (Walnuts or Pecans)
  • 1/2 cup Blueberries

How to Make Cottage Cheese Banana Bread
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a mixing bowl, mash the ripe bananas. Then, whisk in the eggs, cottage cheese, maple syrup, and vanilla extract.
  3. In a separate bowl, combine the almond flour, baking soda, and ground cinnamon. Whisk thoroughly.
  4. Gradually fold the dry ingredients into the wet mixture, stirring gently until just blended.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
  6. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack.
