How to Make Monster Muffins
  1. Preheat your oven to 350°F (175°C).
  2. Add the fresh spinach to a blender with 1/4 cup of milk and blend until smooth.
  3. In a large bowl, combine the whole wheat flour, baking powder, and any desired green food coloring.
  4. In another bowl, mash the banana and mix in the honey (or maple syrup), eggs, vanilla extract, and your spinach blend. Whisk until well combined.
  5. Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
  6. If using chocolate chips, fold them into the batter now.
  7. Line a muffin tin with cupcake liners or spray with cooking spray, then fill each cavity about 3/4 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Let them cool for a few minutes and top with googly eyes candies.
  10. Serve immediately to delight your family and friends!
