  • 2 teaspoons Garam masala for authentic taste
  • 1 cup Tomato sauce as sauce base
  • 1 cup Heavy cream for texture
  • 0.5 cup Water to adjust consistency

Method
 

Making the Marinade
  1. Combine the marinade ingredients in a large mixing bowl and whisk until smooth.
  2. Coat the chicken pieces in the marinade, cover, and refrigerate for at least 30 minutes.
Cooking the Sauce
  1. Heat the vegetable oil and butter in a large pan over medium heat.
  2. Sauté the chopped onion until soft and translucent, about 5-7 minutes.
  3. Stir in the ginger, garlic, brown sugar, coriander, cumin, smoked paprika, and garam masala; cook for 2 minutes.
  4. Add the tomato sauce and simmer for 5 minutes.
  5. Incorporate the heavy cream and mix until velvety.
  6. Add the marinated chicken and cook until fully cooked, about 10-15 minutes.
  7. Adjust the consistency with water if the sauce is too thick.
