Instructions
  1. Caramelize Onions: Heat a few tablespoons of cooking oil in a skillet over medium heat. Add the sliced medium yellow onions along with a pinch of salt. Stir often and cook until they soften. Lower the heat, add a splash of water, and continue to cook until the onions are deeply caramelized, about 15-20 minutes—sweet and golden is the goal.
  2. Scramble Eggs: In a clean, cold skillet, crack open your large eggs and mix them well. Then, add a tablespoon of unsalted butter and place the skillet over medium-low heat. Stir continuously until the eggs are just set but still creamy. Season with salt and chopped chives to taste.
  3. Prepare Sauce: In a small bowl, combine sriracha and mayonnaise in a 1:2 ratio—mix until smooth for a creamy and spicy sauce.
  4. Toast Brioche Buns: Spread butter generously on your brioche buns. Toast them in a pan until golden brown. Once toasted, smear sriracha mayo on both sides, then layer the creamy scrambled eggs, melted cheddar cheese, and sweet caramelized onions. Serve immediately.
