How to Make Gorditas
- In a large mixing bowl, combine Maseca masa harina and a generous pinch of salt.
- Gradually add water while mixing with your hands until a non-sticky dough forms.
- Divide the dough into 12 equal portions and cover them with a damp kitchen towel.
- Preheat a comal or skillet over medium heat.
- Roll each portion into a ball, then flatten it until it reaches about 4.5 inches in diameter.
- Place each tortilla on the hot griddle for about 1-2 minutes per side until dark spots form.
- Remove from the heat and cut a slit in each gordita to create a pocket.
- Fill with your favorite ingredients and optionally return to the griddle for crispiness.
