- Begin by generously seasoning both sides of the thick pork chops with salt, garlic powder, onion powder, and black pepper.
- Pour oil into a large skillet and set over medium heat. When the oil shimmers, lay the seasoned pork chops in a single layer and sear undisturbed for 4-5 minutes.
- Carefully flip the pork chops and continue cooking for another 4-5 minutes, or until internal temperature reaches at least 145°F. Let rest for 5 minutes.
- In the same skillet, reduce heat to medium-low and add butter. Once melted, add sliced mushrooms and sauté for about 3 minutes until tender.
- Stir in the flour and cook for about a minute to form a roux. Gradually pour in chicken broth and Worcestershire sauce, scraping the bottom of the skillet.
- Allow the sauce to simmer for 5-7 minutes until it thickens. If too thick, add more broth to reach desired consistency.
- Plate the pork chops and ladle the creamy mushroom gravy on top, serving with mashed potatoes or your favorite side.
