For the Meatloaf

  • 1 lb Ground Pork Lean ground pork can be used if preferred.
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 1/2 cup Milk Dairy-free alternatives: almond or oat milk.
  • 1/2 cup Grated Parmesan Cheese Use nutritional yeast for non-dairy option.
  • 1 cup Finely Chopped Onions Shallots are a good substitute.
  • 1 cup Finely Chopped Mushrooms Shiitake mushrooms can be used for variation.
  • 6 slices Cooked and Crumbled Bacon Turkey bacon can be used for lower fat option.
  • 1 cup Shredded Swiss Cheese Gruyère or mozzarella can be substitutes.
  • 2 Eggs Flax or chia eggs for vegan alternative.
  • 2 tbsp Worcestershire Sauce Use vegan soy sauce as a substitute.
  • 1/2 cup Ketchup Swap for barbecue sauce for a smoky flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes, then crumble it and set aside.
  3. Sauté the chopped onions and mushrooms in the bacon drippings until softened, approximately 5 minutes; set aside to cool.
  4. Combine ground beef, ground pork, breadcrumbs, milk, Parmesan, cooked bacon, Swiss cheese, sautéed onions, and mushrooms in a large mixing bowl. Mix until combined.
  5. Add eggs, Worcestershire sauce, 1 tablespoon of ketchup, garlic powder, thyme, salt, and pepper. Mix gently until just combined.
  6. Shape the mixture into a loaf and place it in a greased baking dish.
  7. Spread the remaining 1/2 cup of ketchup on top of the meatloaf.
  8. Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes before slicing.
