Preparation
- Preheat your oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes, then crumble it and set aside.
- Sauté the chopped onions and mushrooms in the bacon drippings until softened, approximately 5 minutes; set aside to cool.
- Combine ground beef, ground pork, breadcrumbs, milk, Parmesan, cooked bacon, Swiss cheese, sautéed onions, and mushrooms in a large mixing bowl. Mix until combined.
- Add eggs, Worcestershire sauce, 1 tablespoon of ketchup, garlic powder, thyme, salt, and pepper. Mix gently until just combined.
- Shape the mixture into a loaf and place it in a greased baking dish.
- Spread the remaining 1/2 cup of ketchup on top of the meatloaf.
- Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing.
