Method
 

Directions
  1. Preheat the oven to 350°F (175°C).
  2. Dice the red potatoes and onion into small pieces.

  4. Season the potato mixture with kosher salt and smoked paprika.
  5. Whisk together the eggs, cottage cheese, and onion powder in a mixing bowl.
  6. Combine the sautéed potato mixture with the egg mixture.
  7. Fold in the shredded cheddar cheese and chopped chives gently.
  8. Pour the mixture into a greased baking dish.
