- In a mixing bowl, add your ground pork, ancho chile powder, smoked paprika, salt, oregano, cumin, coriander, black pepper, cinnamon, cloves, minced garlic, and apple cider vinegar. Stir until everything is well blended into a flavorful mixture.
- Heat a large skillet over medium heat. Add the chorizo mixture and cook until the pork is fully cooked, about 8-10 minutes.
- Once the pork is cooked through, introduce your homemade chorizo into the skillet. Stir well to combine both meats for an additional 2-3 minutes.
- Gradually add the shredded Mexican melting cheese to the skillet, stirring continuously. Keep cooking until the cheese melts and becomes gooey, approximately 5 minutes.
- Transfer the Queso Fundido to a serving dish, and it's ready to enjoy! Pair with your favorite tortilla chips or fresh veggies for dipping.
