- Preheat the oven to 160°C (320°F).
- Season the beef roast generously with salt and pepper.
- In an oven-safe pot, heat olive oil over medium-high heat. Sear the beef roast on each side for 5-7 minutes until golden brown.
- Remove the browned roast from the pot and set aside. Sauté chopped onions and minced garlic in the same pot until softened, about 3-4 minutes.
- Add the carrots and cook for an additional 2 minutes.
- Deglaze the pot with red wine, scraping up any browned bits from the bottom and allow it to boil briefly.
- Stir in beef broth, thyme, and bay leaves. Return the roast to the pot, cover, and prepare for roasting.
- Roast in the oven for 2 to 2.5 hours, or until the roast is tender.
- Rest the roast for 10 minutes after removing it from the oven.
