Method
 

Cooking Instructions
  1. Preheat the oven to 160°C (320°F).
  2. Season the beef roast generously with salt and pepper.
  3. In an oven-safe pot, heat olive oil over medium-high heat. Sear the beef roast on each side for 5-7 minutes until golden brown.
  4. Remove the browned roast from the pot and set aside. Sauté chopped onions and minced garlic in the same pot until softened, about 3-4 minutes.
  5. Add the carrots and cook for an additional 2 minutes.
  6. Deglaze the pot with red wine, scraping up any browned bits from the bottom and allow it to boil briefly.
  7. Stir in beef broth, thyme, and bay leaves. Return the roast to the pot, cover, and prepare for roasting.
  8. Roast in the oven for 2 to 2.5 hours, or until the roast is tender.
  9. Rest the roast for 10 minutes after removing it from the oven.
