Ingredients
  

For the Meatloaf
  • 1 pound Ground Beef or ground turkey for a lighter option
  • 1 pound Ground Pork or more ground beef or ground chicken for different flavor profiles
  • 1 cup Breadcrumbs gluten-free breadcrumbs for a gluten-free option
  • 1/2 cup Milk almond milk or another milk alternative can be used
  • 1/2 cup Parmesan Cheese nutritional yeast serves as a dairy-free version
  • 1 medium Onion (finely chopped) or shallots for a milder taste
  • 1 cup Mushrooms (finely chopped) any chopped mushrooms like cremini or shiitake
  • 4 slices Bacon turkey bacon can be used for a healthier alternative
  • 1 cup Shredded Swiss Cheese Gruyere can replace Swiss for a different flavor
  • 2 large Eggs or flaxseed meal mixed with water for an egg replacement
  • 2 tablespoons Worcestershire Sauce soy sauce can be used for a similar effect
  • 1/4 cup Ketchup substitute with BBQ sauce for a different flavor
  • 1 teaspoon Garlic Powder fresh minced garlic can also be used
  • 1 teaspoon Dried Thyme fresh thyme or Italian seasoning can be substitutes
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For Serving
  • 4 cups Creamy Mashed Potatoes
  • 2 cups Roasted Vegetables like carrots or green beans
  • 4 cups Crisp Green Salad

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook your bacon over medium heat until crispy and golden.
  3. Add finely chopped onions and mushrooms to the skillet and sauté for 5-7 minutes until softened.
  4. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, grated Parmesan, crumbled bacon, shredded Swiss cheese, and the sautéed veggies.
  5. Add in your eggs, Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and pepper. Gently mix until everything is combined.
  6. Transfer the mixture into a greased baking dish and shape it into a loaf.
  7. Spread the remaining ketchup over the top of the loaf.
  8. Place your meatloaf in the oven and bake for 60-70 minutes or until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for about 10 minutes before slicing.
