Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, cook your bacon over medium heat until crispy and golden.
- Add finely chopped onions and mushrooms to the skillet and sauté for 5-7 minutes until softened.
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, grated Parmesan, crumbled bacon, shredded Swiss cheese, and the sautéed veggies.
- Add in your eggs, Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and pepper. Gently mix until everything is combined.
- Transfer the mixture into a greased baking dish and shape it into a loaf.
- Spread the remaining ketchup over the top of the loaf.
- Place your meatloaf in the oven and bake for 60-70 minutes or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for about 10 minutes before slicing.
