Making the Pie
- Prepare the Crust: Crush graham crackers in a food processor and mix with melted butter. Press into a 9-inch pie dish and chill for 15 minutes.
- Make the Blueberry Chia Filling: Mash fresh blueberries, then combine with chia seeds, sweetener, lemon juice, and salt. Mix in Greek yogurt or cream cheese and let sit for 5-10 minutes.
- Assemble the Pie: Spoon the blueberry mixture over the chilled crust, cover with plastic wrap, and chill for at least 3-4 hours, preferably overnight.
- Garnish and Serve: Decorate with fresh blueberries, lemon zest, and mint leaves just before serving. Slice using a hot knife.
