For the Seasoning
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Paprika
For the Creamy Mixture
  • 1/2 cup Reduced fat mayo
  • 1/2 cup Fat free Greek Yoghurt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
For the Vegetables
  • 1 medium Onion finely diced
  • 1 medium Carrot chopped
  • 2 cloves Garlic crushed
  • 1 medium Red bell pepper chopped
For the Main Dish
  • 1 pound Extra lean beef mince
  • 1 cup Long grain white rice
  • 2 cups Chicken stock
For Serving
  • 1 cup Colby cheese grated
  • 2 tablespoons Spring onions chopped
  • to taste Salt and pepper

Method
 

Cooking Steps
  1. Spray a large pan with low-calorie spray. Add finely diced onion, chopped carrot, and crushed garlic. Sauté until the vegetables are soft and fragrant, about 5 minutes.
  2. Add the extra lean beef mince to the pan. Cook until browned and crumbly, stirring occasionally for 6-8 minutes.
  3. Stir in the Cajun seasoning, paprika, and tomato paste. Add the chopped red bell pepper and cook for an additional 2-3 minutes.
  4. Pour in the dry long grain white rice and chicken stock. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
  5. Once the rice is cooked, gently fold in the reduced fat mayo, fat-free Greek yoghurt, garlic powder, onion powder, and grated Colby cheese.
  6. Season generously with salt and pepper. Garnish with chopped spring onions before serving.
