  • 1 tbsp Smoked Paprika Regular paprika can substitute
  • 3 cloves Garlic Fresh or minced
  • 1 medium Onion Yellow or white onions
  • 2 tbsp Olive Oil Vegetable oil is a suitable alternative

For Garnish

Cooking Instructions
  1. In a large pot, add olive oil and warm it over medium heat until shimmering.
  2. Add the chopped onion and cook until translucent, about 3-4 minutes.
  3. Toss in the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the pumpkin puree and mix well, cooking for another minute.
  5. Pour in the vegetable broth and heavy cream (or coconut milk), stirring until well combined.
  6. Mix in the chipotle peppers, smoked paprika, salt, and pepper.
  7. Bring the mixture to a boil, then add the pasta, ensuring it's submerged.
  8. Cover the pot and reduce heat to simmer, cooking for 10-15 minutes until al dente.
  9. Taste and adjust seasoning with more spices if needed.
  10. Garnish with fresh herbs and Parmesan cheese before serving.
