  • to taste Pepper essential for flavor enhancement
Salad
  • 1 lb Pasta any short pasta like penne or farfalle
  • 8 oz Fresh Mozzarella substitute with feta for a tangy twist
  • 3 medium Peaches nectarines can be substituted
  • 2 cups Cherry Tomatoes any type of tomato works
  • 1 cup Arugula spinach can be used as an alternative
  • 1/2 cup Basil Leaves fresh parsley can be used, but changes flavor

Method
 

Preparation
  1. In a bowl, whisk together balsamic vinegar, Dijon mustard, honey, and dried oregano. Slowly drizzle in olive oil while whisking until smooth. Season with salt and pepper; set aside.
  2. Boil 1 lb of pasta in salted water until al dente, approximately 8-10 minutes. Drain and rinse under cold water to cool, preventing it from sticking.
  3. In a large bowl, mix the cooled pasta with fresh mozzarella, diced peaches, halved cherry tomatoes, arugula, and fresh basil. Gently toss to combine.
  4. Pour the balsamic dressing over the salad and toss gently to coat everything evenly. Adjust seasoning with salt and pepper as needed.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.

Notes
