Ingredients

For the Batter
  • 3 medium Very Ripe Bananas well-mashed for optimal texture
  • 1 cup Smooth Natural Peanut Butter can substitute with almond butter for nut-free
  • 2 cups Instant or Quick Cooking Oats do not use rolled or steel-cut oats
For the Mix-ins
  • 1/3 cup Chocolate Chips or substitute with dried fruit, nuts, or seeds

Equipment

  • Loaf pan

Method

Instructions
  1. Preheat the oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper for easy removal later.
  2. Mash the bananas in a large bowl until nearly smooth, ensuring you get those very ripe bananas as they add the perfect amount of natural sweetness and moisture to the bars.
  3. Mix in the creamy peanut butter and a dash of vanilla extract. Blend until everything is well combined; the mixture should be rich, velvety, and oh-so-delicious!
  4. Stir in the quick cooking oats along with a pinch of salt and a teaspoon of baking powder. This is where the structure begins to form, providing that delightful chewy texture!
  5. Fold in 1/3 cup of chocolate chips, reserving the rest for topping. The melted chocolate will add a lovely sweetness and richness to your peanut butter banana bars.
  6. Pour the mixture into the prepared loaf pan, gently smoothing it out with a spatula to ensure even baking. You want it to bake perfectly all the way through!
  7. Sprinkle the reserved chocolate chips on top, giving your bars a beautiful touch that’ll melt into divine pockets of chocolate as they bake.
  8. Bake for 25-30 minutes until golden and a knife inserted in the center comes out clean. The heavenly aroma will let you know they’re nearly ready!
  9. Cool the bars for a few minutes in the pan before transferring them to a wire rack, allowing them to chill out completely before you slice into them.
