  1. Preheat the oven to 350°F (175°C). Prepare two 8x4-inch loaf pans by lightly coating them with cooking spray to prevent sticking.
  2. Whisk together the dry ingredients in a large mixing bowl. Combine the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice until evenly mixed.
  3. Mix the wet ingredients in another bowl. Combine mashed bananas, applesauce, peanut butter, oil, eggs, and vanilla using a whisk until the mixture is smooth and creamy.
  4. Combine the dry and wet ingredients gently. Pour the wet mixture into the dry ingredients and stir carefully with a spatula, ensuring everything is just combined without overmixing.
