How to Make Pineapple Coconut Bread
  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together all-purpose flour, granulated sugar, baking powder, baking soda, salt, and shredded coconut in a large bowl.
  3. Combine melted butter, eggs, vanilla extract, buttermilk, and crushed pineapple in another bowl.
  4. Fold the wet ingredients into the dry mixture gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-60 minutes, or until a toothpick comes out clean.
  7. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
