How to Make Pineapple Coconut Bread
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Whisk together all-purpose flour, granulated sugar, baking powder, baking soda, salt, and shredded coconut in a large bowl.
- Combine melted butter, eggs, vanilla extract, buttermilk, and crushed pineapple in another bowl.
- Fold the wet ingredients into the dry mixture gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, or until a toothpick comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
