How to Make Pineapple Sandesh
- Begin by finely grating your fresh coconut and chopping the ripe pineapple into small pieces.
- In a mixing bowl, combine the grated coconut, chickpea flour, and sugar. Stir gently.
- Fold in the chopped pineapple pieces to the mixture.
- Transfer the mixture to a non-stick pan over low heat. Cook while stirring continuously for about 5-7 minutes.
- Once the mixture is ready, let it cool slightly. Then, grease your hands and take small portions to shape into bite-sized discs or squares.
- Sprinkle the chopped nuts and optional desiccated coconut on top of each piece. Place your Sandesh in the refrigerator to chill for at least 30 minutes.
