How to Make Pineapple Sandesh
  1. Begin by finely grating your fresh coconut and chopping the ripe pineapple into small pieces.
  2. In a mixing bowl, combine the grated coconut, chickpea flour, and sugar. Stir gently.
  3. Fold in the chopped pineapple pieces to the mixture.
  4. Transfer the mixture to a non-stick pan over low heat. Cook while stirring continuously for about 5-7 minutes.
  5. Once the mixture is ready, let it cool slightly. Then, grease your hands and take small portions to shape into bite-sized discs or squares.
  6. Sprinkle the chopped nuts and optional desiccated coconut on top of each piece. Place your Sandesh in the refrigerator to chill for at least 30 minutes.
