- Boil the Eggs: Place eggs in a medium pot, cover with water, and bring to a rolling boil.
- Set & Soak: Cover the pot, remove from heat, and let sit for 10-12 minutes.
- Mash the Avocados: Halve and scoop avocados into a mixing bowl and mash them lightly.
- Mix the Veggies: Add chopped red onion, halved cherry tomatoes, cilantro, lime juice, and olive oil to the bowl.
- Cool the Eggs: Transfer eggs to ice water for 5 minutes to cool.
- Chop & Fold: Chop the cooled eggs and fold them into the avocado mixture.
- Season: Season the salad with salt, pepper, and red pepper flakes.
- Taste & Adjust: Taste your salad and adjust seasoning before serving.
