How to Make Puff Pastry Croque Madame
- Preheat the oven to 400°F (200°C).
- Roll out each sheet of puff pastry and cut into 4 equal squares. Space them on parchment-lined baking sheets.
- Poke holes in the center of each pastry with a fork. Brush with egg wash and sprinkle with kosher salt.
- Layer the ham over the puff pastry squares, then add a ring of Gruyère cheese. Leave a space for the egg.
- Bake for 10-15 minutes until the edges are puffed and golden brown.
- Remove from the oven and press a slight divot in the center of each pastry. Crack in the eggs, and season with salt and pepper.
- Return to the oven and bake until egg whites are fully set, about another 10-15 minutes.
- Garnish with chopped chives and serve immediately.
