Method
 

How to Make Puff Pastry Croque Madame
  1. Preheat the oven to 400°F (200°C).
  2. Roll out each sheet of puff pastry and cut into 4 equal squares. Space them on parchment-lined baking sheets.
  3. Poke holes in the center of each pastry with a fork. Brush with egg wash and sprinkle with kosher salt.
  4. Layer the ham over the puff pastry squares, then add a ring of Gruyère cheese. Leave a space for the egg.
  5. Bake for 10-15 minutes until the edges are puffed and golden brown.
  6. Remove from the oven and press a slight divot in the center of each pastry. Crack in the eggs, and season with salt and pepper.
  7. Return to the oven and bake until egg whites are fully set, about another 10-15 minutes.
  8. Garnish with chopped chives and serve immediately.
