Ingredients
  

For the Broth
  • 6 cups Low Sodium Chicken Broth
  • 2 whole Star Anise
  • 1 stick Cinnamon Stick
  • 1 tablespoon Ginger (minced)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Fish Sauce
  • 2 tablespoons Low Sodium Soy Sauce
  • 1 stalk Lemongrass can use lemongrass paste if fresh isn't available
For the Noodles
  • 8 oz Rice Noodles opt for uncooked noodles
For the Toppings
  • 1 lb Large Shrimp (peeled and deveined) fresh for best taste
  • 2 cups Bok Choy (chopped)
  • 1 whole Jalapeno (sliced) adjust amount based on heat preference
  • 2 tablespoons Lime Juice for brightness
  • 1/4 cup Cilantro (chopped) for garnish
  • 1 cup Button Mushrooms (optional) for extra veggies

Method
 

How to Make Shrimp Pho
  1. Cook the noodles: Begin by preparing the rice noodles according to the package instructions. Once cooked, drain them well and set aside.
  2. Heat the oil: In a large pot over medium-high heat, pour in the oil. Allow it to warm up and shimmer.
  3. Toast the spices: Add the star anise and cinnamon stick to the pot, toasting for about 2 minutes.
  4. Sauté aromatics: Stir in the minced ginger and garlic, sautéing until the garlic is slightly browned.
  5. Simmer the broth: Pour in the chicken broth, fish sauce, soy sauce, lemongrass, half of the sliced jalapeno, and shrimp shells. Simmer for 10-15 minutes.
  6. Strain the broth: Using a metal sieve, strain out the solids from the broth, returning the clear liquid to the pot.
  7. Add bok choy and shrimp: Stir in the chopped bok choy and shrimp. Cook for about 2 minutes, or until the shrimp turns pink.
  8. Add final touches: Off the heat, stir in the lime juice and chopped cilantro.
  9. Serve and enjoy: Place the cooked noodles in bowls, ladle the broth and shrimp over, and garnish with cilantro and jalapeno slices.
