Preparation Steps
  1. Preheat the oven to 350°F (175°C). Prepare your loaf pan by greasing it with butter or lining it with parchment paper.
  2. Dice the apples by peeling, coring, and cutting them into 1/4-inch cubes. Toss with lemon juice.
  3. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  4. Cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  5. Incorporate the eggs, one at a time, then stir in the vanilla extract and sour cream until fully combined.
  6. Fold the dry ingredients into the wet mixture gently.
  7. Gently mix in the diced apples.
  8. Combine the brown sugar and cinnamon in a separate bowl.
  9. Pour half of the batter into the loaf pan and sprinkle with half of the cinnamon mixture.
