Preparation Steps
- Preheat the oven to 350°F (175°C). Prepare your loaf pan by greasing it with butter or lining it with parchment paper.
- Dice the apples by peeling, coring, and cutting them into 1/4-inch cubes. Toss with lemon juice.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Incorporate the eggs, one at a time, then stir in the vanilla extract and sour cream until fully combined.
- Fold the dry ingredients into the wet mixture gently.
- Gently mix in the diced apples.
- Combine the brown sugar and cinnamon in a separate bowl.
- Pour half of the batter into the loaf pan and sprinkle with half of the cinnamon mixture.
- Top with the remaining batter and sprinkle the last of the cinnamon mixture on top.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
