- In a mixing bowl, combine chicken mince with half of the minced lemongrass, half of the garlic, fish sauce, and dark soy sauce. Allow to marinate for about 30 minutes.
- Carefully wash and separate the lettuce leaves. Make sure they are dry to maintain their crispness.
- In a large pan, heat 1-2 tablespoons of neutral vegetable oil over medium-high heat until shimmering.
- Add remaining lemongrass and garlic to the hot oil. Sauté until fragrant, about 1-2 minutes.
- Add marinated chicken mixture to the pan. Stir-fry for about 5-7 minutes, until chicken is cooked through.
- If desired, gradually add a cornstarch slurry while stirring continuously to thicken sauce.
- Scoop about 1 tablespoon of chicken filling into each lettuce leaf. Garnish with peanuts, coriander, or spring onions, then serve immediately.
