Ingredients
  

For the Filling
  • 500 grams chicken mince thigh mince for juiciness
  • 2 stalks fresh lemongrass pound and mince tender white parts
  • 4 cloves fresh garlic opt for fresh over garlic powder
  • 1 medium shallot can swap with ⅛ red onion
  • 1 tablespoon fish sauce use ¾ tablespoon for milder taste
  • 1 tablespoon dark soy sauce Kicap manis can be used as substitute
  • 1 tablespoon brown sugar palm sugar is a great alternative
  • 1 juice of fresh lime save zest for other dishes
  • 2 pieces fresh chili peppers mix red and green for vibrancy
  • 1-2 tablespoons neutral vegetable oil skip olive oil to keep it authentic
For the Garnish
  • ¼ cup grated peanuts fresh peanuts enhance texture
  • ¼ cup fresh coriander or spring onions skip coriander if disliked
  • 1 optional red chilies for extra heat and color
For the Wrap
  • 8-10 leaves lettuce washed and dried thoroughly

Method
 

Preparation
  1. In a mixing bowl, combine chicken mince with half of the minced lemongrass, half of the garlic, fish sauce, and dark soy sauce. Allow to marinate for about 30 minutes.
  2. Carefully wash and separate the lettuce leaves. Make sure they are dry to maintain their crispness.
  3. In a large pan, heat 1-2 tablespoons of neutral vegetable oil over medium-high heat until shimmering.
  4. Add remaining lemongrass and garlic to the hot oil. Sauté until fragrant, about 1-2 minutes.
  5. Add marinated chicken mixture to the pan. Stir-fry for about 5-7 minutes, until chicken is cooked through.
  6. If desired, gradually add a cornstarch slurry while stirring continuously to thicken sauce.
  7. Scoop about 1 tablespoon of chicken filling into each lettuce leaf. Garnish with peanuts, coriander, or spring onions, then serve immediately.
