Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the dry ingredients in a medium bowl: all-purpose flour, baking powder, baking soda, and salt; set aside.
  3. Cream the butter and sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
  4. Add in the egg and vanilla extract to your butter mixture, mixing until fully combined.
  5. Combine the dry ingredients with the wet mixture gradually, mixing until just combined.
  6. Divide the dough into two portions. Mix one portion with half the Jello powder until evenly distributed.
  7. Scoop tablespoon-sized portions of each colored dough, roll them into balls, and coat generously in powdered sugar.
  8. Place the dough balls on your prepared baking sheet, spacing them about 2 inches apart, and flatten them slightly.
  9. Bake for 10-12 minutes, until the edges are lightly golden.
  10. Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
