Baking Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the dry ingredients in a medium bowl: all-purpose flour, baking powder, baking soda, and salt; set aside.
- Cream the butter and sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
- Add in the egg and vanilla extract to your butter mixture, mixing until fully combined.
- Combine the dry ingredients with the wet mixture gradually, mixing until just combined.
- Divide the dough into two portions. Mix one portion with half the Jello powder until evenly distributed.
- Scoop tablespoon-sized portions of each colored dough, roll them into balls, and coat generously in powdered sugar.
- Place the dough balls on your prepared baking sheet, spacing them about 2 inches apart, and flatten them slightly.
- Bake for 10-12 minutes, until the edges are lightly golden.
- Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
