- Season the chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, chopped rosemary, salt, and pepper.
- Layer the sliced red onion and Honeycrisp apples in a baking dish.
- Arrange the seasoned chicken thighs on top of the apples and onions.
- Drizzle with olive oil and add additional rosemary sprigs.
- Bake for 35-45 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
