How to Make Hot and Sour Soup
  1. In a large pot, bring 8 cups of chicken or vegetable broth to a gentle simmer.
  2. Toss in 8 ounces of sliced shiitake mushrooms and 1 can of bamboo shoots.
  3. Mix in 1/4 cup rice vinegar, 1/4 cup low-sodium soy sauce, 2 teaspoons of ground ginger, and 1 teaspoon of chili garlic sauce.
  4. Blend 1/4 cup of cornstarch with water to form a slurry, then stir into the soup.
  5. Slowly drizzle in 2 whisked eggs while continuously stirring.
  6. Fold in 8 ounces of firm tofu cubes and 4 sliced green onions.
  7. Pour in 1 teaspoon of toasted sesame oil, then season with kosher salt and white pepper to taste.
