  • 4 large Eggs substitute with egg whites for a lighter option

  • 1/4 cup Milk for a lighter version, use unsweetened almond milk
  • 1 tablespoon Butter olive oil can be a healthier substitute
For the Filling
  • 6 links Breakfast Sausage swap for turkey sausage or plant-based alternatives
  • 1 cup Shredded Cheddar Cheese substituting with Monterey Jack or Pepper Jack can vary the taste
For the Wrap
  • 4 8-inch Flour Tortillas alternatively, use whole wheat or corn tortillas
  • as needed Cooking Spray olive oil spray or a small amount of butter can be substituted

Method
 

Directions
  1. In a medium bowl, crack the eggs and whisk them with salt, pepper, and milk until smooth and frothy.
  2. In a non-stick skillet, melt a tablespoon of butter over medium heat. Pour in the egg mixture and scramble gently until just set.
  3. In another skillet, cook the breakfast sausage links over medium heat until browned and fully cooked.
  4. Spray a clean skillet lightly with cooking spray and heat over medium-low to crisp the tortillas.
  5. Lay a tortilla flat, spoon scrambled eggs in the center, add a sausage link, and sprinkle with cheddar cheese.
  6. Tightly roll the tortilla, folding in the sides to encase the filling.
  7. Place seam-side down in the hot skillet and cook for 2-3 minutes until golden brown. Flip and repeat.
  8. Let the roll-ups rest for a couple of minutes before slicing in half. Enjoy warm!
